When life gives you lemons.....

All I can say is amen to this statement. So living in Florida we have many natural citrus trees and well lemon is one among many! I am super excited about this post because after hubby was medically retired, he had always promised me an orchard...well I get a citrus one instead and trust me the only complaint I have is what in Heck do you do with all these lemons, oranges and limes "OH My"!

So first place I usually hit is Google the mighty search engine and where does it lead me???? PINTEREST Bawhahah. Not that I am complaining cos I found some awesome recipes there. I can say that the microwave lemon curd does work, so does the lemon bars, and the lemon drop cookies. So without further ado I am posting links to cook or what ever with lemons!

I guess the whole thing of when life give you lemons you make lemonade needs to change to When life gives you lemons you get creative!

Caitlyn Ember Adams Gone to soon

Caitlyn Ember Adams 01/23/2009- 02/06/2012

This is my daughter Caitlyn. She would be turning 5 years old tomorrow, but sadly we celebrate her day of life without her. Which it's hard to think of as a parent that she should be here and celebrating not us celebrating without her.

She was a brave and strong little girl. She had every doctor well most doctors wrapped around her lil finger and knew how to use them long lashes to get them do what ever it took to make her feel better. She loved to prove them wrong on so many occasions it wasn't even funny.

She sadly became an angel on February 6, 2012. We miss her so much and there is still that empty void in hearts and home without her. Hug your kiddos while you can, you can never say I love you enough when they are little. I leave you with this poem that so fits her life.

I am Free

Don't grieve for me, for now I'm free.
I'm following the path God has laid you see.
I took His hand when I heard Him call.
I turned my back and left it all.

I could not stay another day,
To laugh, to love, to work or play.

If my parting has left a void,
Then fill it with remembered joys.
A friendship shared, a laugh, a kiss,

Why buy it if you can make it?

Ok mom's and cooks I know you can answer this how many times have you started gathering everything up for a recipe and realized...Oh smack I need X spice and I don't have or that over salt laden POS they call a seasoning packet? Well have I got news for you...why go back out to the store, wasting gas, and buying some salt laden packet that you know darn well that you can make at home...check it out.

Taco Seasoning
6 tsps. chili powder
5 tsps. paprika
4-1/2 tsps. cumin*
3 tsps. onion powder
2-1/2 tsps. garlic powder
1/8 to 1/4 tsp. cayenne pepper

In storage container with tight-fitting lid, combine
all ingredients; mix well. Seal tightly. Store in
cool, dry place for up to 6 months.
21 teaspoons (about 1/2 cup)
TIPS
*Cumin, an herb, is ground from cumin seeds, and
there is no substitute for its flavor.
Seven teaspoons of mix equal a 1.25-oz. package of

purchased taco seasoning mix.

Old Bay Seasoning or close to it!

1 Tbs. Celery Seed
1 Tbs. Whole Black Peppercorns
6 Bay Leaves
1/2 tsp. Whole Cardamom
1/2 tsp. Mustard Seed
4 Whole Cloves
1 tsp. Sweet Hungarian Paprika
1/4 tsp. Mace

Grind dry spices well and seal in ziploc or vacuum seal bag (or jar). Measure all into a ziploc bag, seal & shake to combine. Pour into a spice jar or bottle. Makes a Lovely Gift.

Beef Stew Seasoning- and yes this one is awesome!

1 cup Instant Flour (Wondra)
2 teaspoons Oregano
1 tablespoons basil
2 tablespoons + 1 tsp salt
1 1/2 Teaspoons black pepper
2 tablespoons + 1 tsp Garlic Powder
2 tablespoons + 1 tsp Paprika
1/2 teaspoon cayenne pepper
1 Tbs Celery Seed
2 tablespoons + 1 tsp Onion Powder
1 tsp. rosemary

Measure all of the ingredients into a medium bowl, mixing very well. Pour into a jar, cover & add a label with directions for use.

To use: add 2-3 Tbs of seasoning per pound of meat used.

Chili Seasoning Mix

2 Tbsp. cumin
1 Tbsp. each cayenne pepper
1 Tbsp. garlic powder
1 Tbsp. onion powder
1 tsp. allspice
1 tsp. cloves
1 tsp. oregano

Makes about 1/3 cup.

Combine spices and seal in ziploc or vacuum seal bag (or jar). Measure all into a ziploc bag, seal & shake to combine. Pour into a spice jar or bottle. Makes a Lovely Gift. For use 1-2 Tbsp. per pound of beef.

I have used the above seasonings for years and have never bought a store brand or brand name seasoning packet. I have all these spices and more in my kitchen so for me the total cost is 0$. I do tend to buy my spices in bulk when I row low and then make more. Most of these have a shelf life of 3-6 months.

Remember that spices and seasoning mixes hate moist areas and love dark cool places to keep and not stick together. If you are wanting more recipes google herb and seasoning mix recipes and tons of websites come up. The great thing is that you can tailor these recipes to your liking.

Mock Keebler Soft Batch Chocolate Chip Cookies

Don't you just want to gobble them up???

I got this recipe from the food guy that lets you made brand named recipes at home. I have to admit that these are better than the store bought ones and it makes more of them too! Hubby and son can't seem to get enough this cookie. The trick to keeping them super moist is the molasses...shhhh
Ingredients:
1 lb. of butter ( 4 sticks of butter), softened 2 eggs 2 Tbsp. molassess 2 tsp. vanilla 1/3 C. water 1 1/2 C. sugar 1 1/2 C. brown sugar ( I use light) packed 1 tsp. baking powder
1 1/2 tsp. baking soda 1 tsp. salt 5 C. flour 2 pkgs. of chocolate chips or chunks

1. Preheat oven 375 degrees
2. Cream butter, eggs, molasses, vanilla, and water in med. size bowl.
3. In large bowl sift together sugars, baking powder, baking soda, salt and flour.
4. Combine wet mix with dry mix. Add Chocolate chips.
5. Shape dough into 1-in. balls and place them 1-in. apart on a greased baking sheet. I use a small cookie scoop so all my cookies are the same size.
6. Bake 8 min or until light brown around the edges. I let mine sit on the pan for 5 min to cool a bit before removing to cool completely.
